Breakfast!

Waffles with bananas, organic syrup and BACON on the side!!!  Major craving this morning and it was so stinkin' great I ate both pieces in about three seconds.


 Lunch:
Chicken noodles soup broth with grilled cheese and pickles.

 Grande Peppermint Latte

Dinner:
Spaghetti and meat sauce with fresh basil and asiago cheese
Side salad with Vinaigrette dressing


 Dessert:
After eight mints and I ate quite a few of these...

I wrote a 'What did my toddler eat today?' blog post when Scarlet was around this age and it was one of the most popular posts I've ever done - maybe because Moms just love to get easy ideas from other moms out there - I know I do!  So here is a 'What did my 2-year-old eat today?' post for you.  It's what Will typically has most days.  Hope you enjoy!

We have been trying to pray before dinner every night and William is often the one that reminds us all.  He really likes doing it for whatever reason and I just couldn't help myself - I had to get a snap of him praying.

We also give the kids a bedtime snack every night which I forgot to take a snap of but this evening William had a Christmas orange and water.

A quick snippet of what I ate for a day while in NYC!  

First meal of the day was this gorgeous Lox and bagel dish that I ordered up to our suite.  I honestly could have eaten this every single day that we were travelling.  It was that good.  I'm a huge fan because I like to smear the cream cheese (thickly) over a bagel and add capers with onions and of course the salmon.  The lemon drizzled on the size was just pure class.  #HEAVEN
Nate was still asleep in our room so I popped on a little show for Scarlet and William to enjoy while I took fifteen minutes to indulge.  EVERY Mother out there needs to do this for herself at some point in her life. 


Lunch
We at at the most gorgeous outdoor restaurant and I had the chicken salad with walnuts, barley and asparagus.  Dear New York - you really just do it so well.

Dinner 
We stopped off for some burgers and fries at a place called SCHNIPPERS which also serves WINE!  I had white, Nate had red and we enjoyed these treats for supper.  This place reminded me of the Shake Shack in Vegas if you've ever been there.  Super modern and fun and...wine!

Breakfast:
I've been good and have had oatmeal almost every day these past few weeks, but today - I wanted a croissant and peaches.  It was glorious.  Coffee had a splash of whole organic milk.  

Ok - guys.  I NEVER do this.  But today - I was really into it.  I think it's cause I slept poorly last night and when I sleep badly - I eat badly.  PLUS, the kids and I were out all morning and we needed a quick easy something.  I wouldn't even call it lunch.  And, yes, that's a side spinach salad with balsamic and olive oil to balance it all out.  Less guilt if I eat spinach with fast food...

Breakfast:
We always bring a big bag of Oatmeal with us whenever we go on vacation.  Even though it isn't the tastiest meal in the world, it's really easy to whip up when the kiddos are starving, it's cheap and it will fill you up till lunch.  We bought some frozen berries to go with and had this almost everyday while we travelled.

Lunch:
Eating by the pool/ocean was one of my splurges this trip.  Since I cook daily at home, I really wanted to have a break from making food and cleaning up afterward at every single meal.  Today I chose a TAB (Turkey, Avo, Bacon) sandwich with fixings and fries on the side.  I ate it all...every last bite.

Snack:
 Tequila Sunrise and I had a 'snack' like this almost everyday at around 2pm ;)

Dinner:

This meal was incredible.  It was during one of our date nights and we picked a gorgeous Italian restaurant that was right on the water.  This fresh seafood pasta dish had black linguine with a thick white wine cream sauce and an array of various pieces of seafood.  It was absolutely heavenly.  My mouth is actually watering thinking about it.  We had margaritas to start and then some wine to sip with dinner.  

April '16
Breakfast:
Two egg omelet with mozzarella cheese, red peppers, turkey and onions.  Starbucks coffee with whole mild added. 

Grilled cheese sandwich with more mozzarella cheese, red peppers and apples.  Green snap peas with THEE BEST basil pesto hummus in the world.  I had more of this later.

Snack:
Grande whole milk caramel macchiato with Banana nut loaf on the side.  The kids helped me eat the treat.

Dinner:
Chicken stir-fry with red peppers (wow, that veggie seems to be a theme today, onion, mushrooms, carrots and white rice).  Yam fries and salad with avo and greek feta dressing.


Red wine on the side (OBVIOUSLY) - super Tuscan that the hubby picked out.  He's a red wine snob and I don't really mind so long as it's wet.  ;)

BREAKFAST!
We had pineapple with yogurt in our oatmeal.  Delish!


Lunch
See that guacamole in the top left hand corner of the pic?  That was all mine and I'm pretty sure I finished it off no problem.  I also ordered shrimp and veggie skewers with rice and salad and ate off of both Scarlet and William's plates (fries, chicken, chips etc).  I also had a pina colada x 2.  What can I say?  I was on vacation... 

I also need to mention that I ate a plate of that guac every single day that we were in Mexico.  I'm not totally proud of that fact, but the truth is the truth.  HAHA!



Dinner:
Nate and I went out on a date to the gorgeous hotel next door and had a seaside romantic steak super for two.  It was glorious.

The appetizer was so tasty and sweet.  I don't really remember what the name of the fish was but it was some of the freshest I've ever had!  (And I've been to Asia).

Salad with apples, pecans, feta.

12 oz steak.  Yes - you read that correctly.  I ordered 12 oz and I finished it cause the two sauces that they served were beyond mouthwatering and the steak was a dream.  I forgot to take a pick of my sides which were mashed potatoes and grilled mushrooms thanks to the second glass of Malbec.   

Dessert
(which I didn't actually eat much of cause I was so full)
Banana bread tiramisu, a chocolate mousse served beside a vanilla flavoured creme brûlée.  I ordered port to sip on while Nate helped me with the sweets.

A stack of Panclocks (that's what I've always called them) with organic power berries and pure maple syrup.  Coffee on the side.
OH.  MY.  GAWSH!!!

Grilled cheese sandwich with onion, avo, peppers and naughty ketchup.  I love the stuff...

Dinner
Steak done to perfection on the BBQ by Nate, roasted potatoes and salad with a basil parmesan dressing.  Cab sauv on the side from our wine collective.

(Spinach, avo, strawberries, blueberries, 1/2 a banana, yogurt, milk, carrots and water.)

Lunch
Turkey wrap with more spinach, avo, lettuce, mustard, cucumbers and yellow peppers on the side.

Snack
Coffee with a little dark chocolate cookie (cause what is February without a little chocolate?)

Grande Caramel Macchiato that ended up in the fridge because I didn't get a chance to drink all of it - it's been very busy around here (as usual).

Dinner
I made a creamy herbed mushroom rotini with romano cheese sprinkled on top and a side house salad.  It was so good!

First thing in the morning, before anything else happens, both kids eat an entire banana. 


Scarlet then has a full bowl of oatmeal with yogurt and fresh berries.

Snack - Fruit pack with Pear, Kale and Peas

Lunch 
Yogurt drink (she still isn't huge on milk so I have to find other ways to get it into her)

She also had a few of Williams animal crackers after all of this was consumed.

Bedtime snack is usually grapes but we didn't have any so we went with this orange instead

I don't even like these - they're just in the cupboard cause Nate THINKS I like them but I actually (kinda) like the real halloween kit kat bars but only cause I ate a few when I handed out candy.  So he bought these for me.  He's so sweet.  I ate a handful just to appease him and Scarlet has been helping me out with the rest.

HEY!  Snowman!!!  Eyes off the peppermint latte please and thank you.

Dinner - Shell pasta with creamy mushroom sauce and beef.  Salad is jam packed with avo, feta, kalamata olives, cucumber, and pesto dressing.  White wine on the side.

My new favourite lunch - I take a warm wrap and smoosh avocado and super spicy salsa in there and wrap it up like a sushi roll.  Super fast, super easy, super healthy.  Veg with homemade artichoke dip made by my father-in-law.  YUM! 


Spaghetti and meat sauce with fresh parm and caesar salad.  Holla! Red wine is a must with this dish.

Again - breaking away from the standard oatmeal.  I had full fat greek yogurt with granola, banana, and cinnamon.  Black coffee on the side.

Panini with turkey, cheese and tomato with snap peas and avo

Dinner:
Taco salad
Ground beef. green peppers, salsa, cheese with more avo and franks hot sauce (I put that $hit on everything).  All on a bed of romaine and a little spinach.

Dessert:
BAAAAAAD so baddddd.  Twix bar with zero regrets.  I blame my husband for bringing this into the house.  It's his fault I ate it...


July 24th '15
Breakfast
Trying hard to get out of my oatmeal slump.  Here is granola with almonds, apples and yogurt.  Black coffee on the side.  Delish.

Turkey, Cheddar cheese and tomato panini with half an apple on the side.

Treat
Sucker for the sea salt.  OMG good.

Another treat
Kay - I'm a very very verrrrrry bad girl for consuming this horribly unhealthy drink but it all fairness - it's Nate's fault for bringing it into the house.  HAHA!  I really don't do this often, in fact, I think it's been a few years since I've even had a full sugary soda (wait we call it pop in Canada right?) so this was an uber treat for me that obviously won the stare down.  It was pretty darn good too and I'll also say it was a mini pepsi so #noregrets

Dinner
SUSHI NIGHT!  And might I say - that gyoza was the best I've ever had.  AMAZING!

I know it's a Friday but I was craving Waffles.  Since Nate was home I asked for his specialty breakie.  They were perfect and served with a little side of cantaloupe which I didn't touch (HAHA).  I really hate melon.  But Scarlet ate them all up.

Dinner.  Nate made steak (yay baby) and I did the roasted taters and salad.  Go team!

A cup of oatmeal with a scoop of PB and a dusting of cinnamon.  Don't you LOVE the new placemat?  I feel badly just throwing out Scarlet's artwork so I recycle it by using it for a while as a placemat and then I get to stare and enjoy it at every meal!

Bowtie pasta with rosemary chicken and mushrooms olive oil and balsamic dressing.  Edamame on the side.

Activia yogurt and an apple

Fridays always start to feel like the beginning of the weekend at our house because Nate takes every friday off of work.  Today, he made us waffles with bananas, peaches and real maple syrup for breakfast.  I also had coffee with a splash of milk in there.  Heavenly.

Will is still waking in the night so Stardrugs is still a part of my daily activities.  A grande vanilla latte.  (Yes, I said Stardrugs)...

We were out and about over lunch so we decided to go with something quick and easy - A&W.  What can I say?  I know - because it's hormone free that makes it healthy.  Bam. #burgerbliss


Our family's order.   I got the Teen burger with grilled onions instead of raw onions.  Nate had a double teen and a buddy burger and Scarly had a bebe burger.  SO CUTE!  She devoured it.


For dinner we had a tuna pasta salad with red peppers, olives, lettuce, cucumber, feta cheese and sun-dried tomatoes. I had a Corona lite on the side.  FRI-YAY!

And dessert - the amazing double stuffed Oreo came into my possession.  I took care of it pretty quickly and may have had a few more after that.

Do you like that spoon?  It's actually one of Scarlet's that I just happened to grab and was too lazy to exchange for an adult one.

 I don't know what my deal is but sometimes I'm just dying for a salty breakfast for lunch!  No - I'm not pregnant again...

The BEST Pizza on the planet

I ate about five pieces (what can I say? I'm nursing - I've gotta pack it in for Will too) of the Pistachio Pesto pizza.  I don't normally like to trade up on my faves but we wanted to step out of our comfort zone and try some new ones.  This was seriously mind-blowing.  It looks so simple and boring but it was honestly super flavourful and unique.

Again, no I'm not pregnant haha.
I wanted a treat SOOOO badly after my day and I asked Nate to pick me something up on his way home from work.  This is what he bought!!!  I ate a lot of it and didn't care that I was eating chocolate without being pregnant.  Life is too short and heck I'M NURSING!  Treats are more than welcome right now.

Panini with turkey, jalepeno jack cheese and cucumber on a cinnamon raisin bagel.  It's all we had for bread in the fridge so I just went for it and it actually turned out really nice!  Salty/sweet combo is my fave. 

Yup - it's turned into this.
So for dessert today I had some of Scarlet's alphabet cookies.  They were pretty fantastic.

Snack was a homemade caramel latte from the Nespresso machine.  Man I love that thing.

Just what the Doctor McStuffins ordered!!!
Amid all the toys and washable felts there is a white wine spritzer calling out to me.

No it's not the weekend.
Yes it was 5:00 (somewhere).
No I don't have a problem.
Yes, I have a soft spot for spritzers (half soda water and half vino)
 and with the weather being so BALMY!  I can feel spring in the air...


Dinner was made up by yours truly.  I did a winter casserole type of thing that my Mom used to make for us as kids.  I mixed shell noodles, diced tomatoes, ground beef, marinara sauce, carrots, onion, a bit of blended spinach and tons of spices together.  I then broiled some fancy cheddar on top.  It was really simple but super quick and easy so at this point in our lives it was a major hit all around.  Scarly even ate it right up - but honestly, that's not something I should be surprised at.  She eats everything I put in front of her.  Someone is exactly like her Daddy!

Sushi Saturdays!

Table is set for the best food EVER!



Our order tonight was pretty tame since Scarlet is eating sushi now too.  She really loves it so we want to keep things simple so we can maintain her happy palate.  We ordered a Stampeder roll, California roll, Calamari roll, Spicy Tuna roll and two orders of Salmon Sashimi.  In all truthfulness, I could have eaten this all to myself...

We'll be keeping up with Sushi Saturdays for a long time.  Such a lifesaver.  Hope you had a great weekend!

CHRISTMAS DINNER!

Well first off, major apologies for missing the month of November ENTIRELY.  Honestly, it was as much of a blur as I'm sure you can imagine.  But hey, I wouldn't have it any other way.  

Secondly, I thought it would be neat to show what my new babe eats daily (actually make that every three hours and every TWO if he decides he wants to cluster feed).  Since my diet has been all over the map this past month and I'm sure will be this next one too - this is what I wanted to show you guys instead.  It's amazing how as a parent of two under two you begin to eat bites of leftover toddler crumbs over the sink and you call it a 'meal'.  Nate and I keep mentioning that this is our new Normal.

So here is what Will eats. Every. Single. Day. Eight or Nine in 24 hours.


Yes - that is breastmilk made by yours truly, pumped (with LOVE) for my special little guy.  This is about 5oz and I do label each and every bottle that we store just to keep track since our brains are currently so fried.  

We give Will one of these expressed/pumped bottles once a day so that I (and my lovely lady lumps) can get a little down time.  All that stimulation and pulling and sucking really takes it out of me so the mere fact that he will even take one per day is a lifesaver!  (Scarlet never did).  Other than the bottle per day he is at the boob which is both very challenging at times and the most loving special moment between he and I.  I won't lie - breastfeed isn't all rainbows and unicorns.

His schedule (if you can even call it that) goes a little something like this:

Feed 1: 7am
Feed 2: 10am
Feed 3: 1pm
Feed 4: 4pm
Feed 5: 6pm
Feed 6: 8pm
Feed 7: 10pm
Feed 8: 2am
Feed 9: 6am

And then the whole process starts over again.  As you can see he goes between two, three and four hours in between feeds.  Thankfully the four hour stretches happen at night (WHOO HOO) and the cluster feeds usually happen from 5-10 almost every night.  

I know I promised I would post his weight the next time I wrote!  He is sitting a very healthy 8 pds 4 oz and it's just been the best news all week.  He is growing steadily regardless of his borderline lip and tongue tie.  The night feeds are obviously the hardest but I always say in my head when I'm dragging my haggard body out of bed 'it's a privilege to breastfeed, it's a privilege to breastfeed'.  

I'm definitely going to do another Dec 'EATS' post to make up for the Nov loss so stay tuned for some delicious pics of Xmas dinner at our house (THAT I'M HOSTING!!!)

WOW!  I can't believe that this happened.  I didn't eat my regular oatmeal today because I was craving salty toast and eggs!  I also had half a glass of OJ mixed with club soda (so yummy) and a caramel latte.  

Lunch
TOASTIE!
These are the magical sandwiches (Paninis) that I have been raving about.  You can put whatever you want in them but today I had real turkey breast, avo, arugula and monterey jack cheese with ground pepper.  The bread was from 'Cobs' which thankfully is right near us and it was a rosemary ciabatta bun.  Out of this world!  Scarlet and I also shared an apple.  


Dessert - Yes, there is only so much (or little) time left that I can feel free to do this before baby arrives and I'm milking every minute of it that I can!  Oreo ice cream!!!


Snack 
Delicious pear, perfectly ripe and juicy.  It's such a hit or miss with these guys but when you've got a good one, it can kinda make your day.


I made quessidillas, quesidilas, quesidillas ??? (I'm too lazy to look up the spelling today) for dinner.  We had Grammy over too (Nate's momma) and she and Scarlet were inseparable.

I made these!!! It was super easy too - a must try.  Directions below!
I know I usually do a full days worth of my 'Eats' but I just couldn't resist showing what I 
made for dinner.
Thin crust flatbread pizza with Prosciutto, Arugula and Bocconcini Cheese drizzled in 
olive oil and Asiago shreds.


I made a special drink for myself and put it in a fancy glass because clearly I'm missing these types of bevies.  It was a pineapple coconut juice mix with soda water and Nate had a non-alcoholic Grolsch.  Side salad was just spinach and cucumber with fig balsamic dressing.  Oh my gosh it was all so delicious.  


We had been eating out and ordering from Famoso Pizza quite a bit lately, so I thought I would try to emulate (aka copy) one of their pizza flavours.  I must say - these turned out really well, almost exactly like the Famoso restaurants flatbread and for a fraction of the cost.  I will most definitely do it again!  Basically take the above ingredients and throw them on a flatbread of your choice (ours was left over Naan bread that Joti bought at Superstore), drizzle with your favourite olive oil and bake at 425 degrees for 6-7 minutes depending on your oven.  Put them right on the rack so they get crispy!
SO QUICK AND EASY!  
I made a separate dinner for Scarlet just in case she wasn't a fan of this, but it turned out that I didn't need to, she kept asking for more flatbread!  Total win.  

Hope you give it a go.  It's really so easy and worth it.

I found this mug and bought it immediately.  I mean - it should have said 'Keep Calm and Carry On Shopping Kate'.  It's so me.  I'm slightly paranoid about breaking it because I love it so much so I'm going back tomorrow to get a few more if they still have them.  Haha.

Half an apple and half an avo on two slices of sprouted grain toast.

I made these pumpkin muffins and they were pretty good.  I didn't have the whole plate (although I could have done it easily), but they weren't the biggest hit because I substituted the sugar with applesauce instead.  Scarlet just loved them, but I myself could have gone without.  Nate will eat anything so he wasn't complaining.

I FINALLY did it!
I made this Thai coconut chicken curry soup and it was AMAZING!  The recipe came from the Betty Crocker website and it wasn't easy but absolutely worth it.  Our friends Matt and Nicole made a similar soup for us when Scarlet was just newly born and I've been trying to find a recipe to duplicate that one because I loved it so much.  This definitely hit the spot.  SOOOOOOO DELISH!

Breakfast

1 cup of oatmeal
A heaping spoonful of full fat greek plain yogurt
2 apricots chopped up
Sunflower seeds
Pumpkin seeks
Pecans
Cinnamon
1/2 cup of a Nespresso Latte with Homo milk (I had the other half as I was prepping breakfast)

It was cold today so I wanted a nice warm bowl of soup.  This Campbell Chicken noodle did the trick!  Also, open tomato and dill sandwich with 1/2 an apple and water on the side.


Second latte of the day.  I just love the new caramel flavour that Nate and I ordered.  I could drink this stuff all day - especially on these chilly Sept ones.  
Also, two homemade oatmeal raisin cookies that I made!  They are 'healthy' cookies in that the sugar is reduced (by a lot).  I could tell, but honestly preferred the semi-sweet flavour since the sultanas did a nice job of sweetening it all up.


Snack
Crisp crackers with nuts and dried fruit and jalapeno havarti cheese.

Dinner
These close-ups really don't look all that appetizing but OH YES was it ever delish!

The recipe for this dish is right on the side of a Campbell's noodle soup can!  (That's where I got the idea for dinner tonight).  It was super easy and fairly quick (about 25min with cooking time included).  Scarlet went gaga over this dish and so did Nate so it was a winner for sure.  Really flavourful and cozy tasting.  Perfect for a chilly day like today.

Also, check my swollen foot on the left there!  That's exactly what I'm talking about - the evenings they just go super gigantic!  It's too funny.  I become the Marshmellow Maiden at around 5:00.  HAHA!



It's Fall!!!  
Yup, I'm feeling the need to bake now that we're changing to a cooler season.

These bars were such an amazing treat to have after dinner.  With the newly implemented low to no sugar intake (which has been a bit of a bummer), I've been struggling with what to eat.  I gave these seedy, semi-sweet bars a go and they were the perfect 'dessert'.  There were just a few substitutions to the original recipe but they still turned out.

This season always seems to inspire me to get baking again.  I loved that the entire house started to smell and it definitely felt super cozy and warm all afternoon long.  I like baking, but want to get better at it now that I have some time.   I find it fun, but obviously the best part is trying various recipes once they're complete.

As they were cooking the smell in the house was glorious.  Maple, peanut butter, and vanilla!!!

ORIGINAL RECIPE:

2 cups of Oatmeal
1/3 cup pumpkin seeds 
1/3 sunflower seeds
1/3 shredded coconut
1/3 plain flour
1 1/2 cups butter
1 1/4 cups golden syrup
1 cup soft brown sugar
1 cup sultana raisins
3/4 cups crunchy peanut butter
1 tsp vanilla extract

1. Mix dry ingredients together
2. Melt butter and then mix everything else in the warm saucepan
3. Mix wet and dry together and spread mixture into a baking dish lined with parchment 
or wax paper
4. Bake at 325 Fahrenheit for 20-25 minutes
5. Cool for 15 and swoon!

To make these bars less sugary, I cut out a large amount of the brown sugar and used natural maple syrup instead of the golden (and very thick) syrup.  Everything else is pretty much the same. Our whole family LOVED these bars and I'll be making them again asap (since they're disappearing quickly).  I cut them into half of what was recommended but they are really filling so it's aok ;)

1 cup of Oatmeal with a grande double shot espresso homo milk latte and the best BEST homemade jam - Mom's strawberry, blueberry, rhubarb.  OMGosh I could eat that for days.

Two pieces of bread with a boiled egg, tomato, mayo and dill and 1/4 of an avo.

Kashi chocolate and cherry granola bar


Dinner
Large (EXTRA BIG, haha) organic turkey or pork dog (can't remember).  It was so perfect!  Pickles, onions, ketchup and mustard to salt it up.  This baby LOVES salt!!!  Caesar salad on the side.

Muesli with blueberries.  So delicious with these bursts of blueberries in there too.  (Recipe for Muesli is below in the July section)

LUNCH
Craving the salt - toast with cheddar cheese on one slice and tomato and mayo with salt, pepper and dill on the other.  Mom's homemade greek salad on the side.  Don't mind the massive bite out of the cheese toast - I was so hungry and started before the pic was taken.  Haha.

Ok - this doesn't look that amazing but trust me, it is the BEST SOUP IN THE WORLD!!!  It is from a shop called 'Meez' and it is their Spicy Chicken Curry noodle soup.  It tasted like HEAVEN and I don't even like soup very much.  I had been wanting this stuff for a long time - it's like a mixture of Vietnamese and Indian food mixed together in the perfect combination.  You MUST try it.  There are many locations around but the closest one to us is in Willow Park Village.  

We had a green side salad with cucumber and avocados.  Such a nice dinner and so convenient.

July 22nd


Breakfast
MUESLI! My all-time favourite summer breakfast.  Healthy but a little time-consuming.  The way I make it is I soak the oats in milk the night before I want to eat it.  In the morning I add vanilla yogurt, cinnamon, shredded apple, banana, cinnamon and a little bit more milk.  It is HEAVEN!  After Nate and I got married, I made this almost everyday straight for a year - even on our honeymoon in Hawaii!  Haha.  It's that good.  Writing about it makes my mouth water.


Nate made a large tuna pasta salad for me that would work during lunch for a few days in a row.  So tasty and colourful!  My Mom made a similar pasta salad dish which was just as amazing so I've been eating REALLY well ;)

Linguine and Meat sauce with fresh parmesan.  For dinner tonight, Nate made a mighty fine pasta and meat dish for all of us.  Scar loved it too!!!  I actually like linguine noodles better than spaghetti for some reason - thicker maybe?  But this meal was so comforting and delicious.

June 6th

Breakfast
A big bowl of cheerios with half a banana and whole milk.  These are normally reserved for Scarly but I just couldn't help myself this morning.  I wanted something cool and crunchy.  I also had a vanilla latte.


Lunch
Two scrambled eggs with cheese on white toast with 1/4 of an avocado and salsa!


I also ate these delectable red raspberries that I probably paid WAY too much for, but I couldn't help myself.  How good do these look?!  I also had a large spoonful of full fat cottage cheese on top (2%)


Snack
 Don't mind the crazy excited baby girl in the back - she goes bananas whenever I open a crinkly wrapper of any type.  Even though she has never tried any of these bad treats she gets super excited to the point where she'll run up to me and try to grab it from my hand.  HAHA!



Dinner
I made my famous lasagna (hehe) and this was the first time I did it without a recipe!  All from memory I'm proud to say.  I only forgot one ingredient and that was the Worchestershire sauce for the ground meat.  It wasn't too obvious though.  Nate and I both had seconds...and then thirds it was so good.

I made chicken chunks, rice and fresh asparagus for us today.  It was very nice!

Four pieces of leftover pizza from Panago!  Yup ate all four and was mad when there wasn't anymore in the fridge.  The flavours were chicken fajita and Mediterranean.


I made some chilli for tonight.  


Ground beef, brown, black and kidney beans, chick peas, onions, tomatoes, lot's of seasonings and spice and a little secret ingredient that is slightly naughty but gives it that extra umph.  (It's a squirt or two of Ketchup).



May 1st!

Apologies for the lack of photos in April.  My meals were so pathetic due to the nausea that they weren't even worth taking a pic.  Today I finally feel like I have my appetite back!  This is what I ate!


1 cup of Oatmeal and a massive spoonful of peanut butter.


This is the weirdest thing to me.  I dislike this stuff when I'm not pregnant, but with both Scarlet and this baby I have been craving it at the start of the second trimester!  I have no idea why but I really like it.  Don't want the nespresso (which is madness), just this stuff.




Cucumber with dill, salt, pepper and mayo (pasteurized eggs mayo) on whole wheat toast.  You may not believe me but I ate this sandwich and then immediately afterward proceeded to make another exactly the same.  Finished that one too.  Appetite is back!!!

Feb 28th
ya this happened mid-afternoon today.


I really need to find some will power with the chocolate.  hehe.  Ok ok, this is the last one until I'm pregnant again.  The only reason we had chocolate in the house (again) was because we received a very nice Gift Certificate from our Realtor Sharon Weir and after hanging onto it for a few years we thought we had better redeem it before it expired.  There - that's my excuse for buying and eating it.  Oh man it was good.

One of my girlfriends made this homemade pineapple salsa (ok, her husband helped) and it was SOOO WICKED!  When she was leaving our playdate that day I actually didn't wait to let her offer to leave some - I just said we're keeping it.  Haha.  I added some homemade sun-dried tomato hummus with carrots, avo and pita for lunch today.  Delish and filling.

Hawaiian Meatballs
Keeping the vacation alive as long as possible.

For these Hawaiian meatballs I added about one tablespoon of Worcestershire Sauce to a pound of extra lean organic ground beef.  I mixed one egg, one cup of bread crumbs and about a teaspoon of red pepper flakes with some added black pepper to make it a touch zippy.  After rolling them into balls and then frying them in a pan, I added a touch of soya sauce, teriyaki sauce and onions, red peppers and fresh pineapple.  Serve over rice and voila!



One of my girlfriends asked if I eat everything on the plate from the pictures that I post. Yup - unfortunately I have zero portion control right now and definitely always eat everything off of my plate...without fail...every single time...and sometimes seconds.


Feb 6th


I call these Mookies - a little bit o'muffin a little bit o'cookie.
These are inspired by a gift from a girlfriend who made me a plate of cocoa oatmeal banana protein cookies that were to DIE for.  I decided to come up with my own recipe for fun one day and to also replicate the other ones.  

Oatmeal, water, chocolate, cocoa, banana, Chia seeds, flax and egg.  Oooooey gooey - just the way I like em.  They didn't last long.


Kinda bad but mostly good,
perfect treat for Valentine's Day too.  


After this NO MORE CHOCOLATE!!! (Till I'm pregnant again).

Because it's a new year and we're going on a vacation to Hawaii, I'll be eating the uber healthy stuff.  I figure if I can do at least one extra wholesome and delicious meal a day I know I can stay on the right track.  Oh, and I'll only be drinking on the weekends - that is until the vacation :)

My HEALTHIEST LUNCH


Homemade chili with lean ground beef, black, brown, kidney beans, tomato, spices sitting on a bed of spinach with boiled yams, avocado and plain cous cous on the side.  Everything has been drizzled in olive oil and a bit of pepper for extra kick.  I kept seeing these 'Rainbow Bowls' on Instagram so I decided to make up my own with things that I know are really good for my bod.  Here's to you bikini and to a fit and healthy 2014.


Sometime in December
(I took the pics and forgot to blog.  It was crazy busy during Christmas)


1 Cup of oatmeal with cinnamon and a sprinkle of sunflower seeds.  
Black coffee.


Two pieces of whole grain 'invisible' white bread toast with full fat mayo on one side.  Cucumbers, green onions, lettuce, red peppers and avocado.  Sprinkle dill, salt and pepper on the veggies.  Delish.


The avos didn't fit in the end, so I had them on the side.

A cranberry, water and mango vodka cocktail.  I can't even say that this was a weekend because of the cocktail cause we enjoyed our bevies this holiday season.  However, it was always in moderation and we didn't even dabble in the 'juice' over New Year's, so I don't feel THAT guilty ;)

Since we're going away to a place where I'll be sporting a bikini, I've made a pack with myself that I will try not to eat dessert until we're back home.  (Stupid.  So so stupid of me right around Christmas). So, I have to trick myself into thinking I ate something sweet.  This kinda helps.   It's the Dark Chocolate Mint candle from Bath and Body works.  For the record, I've already had two desserts in the last two weeks, so I'm doing OK.  


Snack

Weekend indulgence...
(This doesn't happen very often so I thought I would document it).

Breakfast is my ultimate FAVOURITE meal of the day even though I usually only have oatmeal and coffee.  But on very rare occasions, I like to make things like waffles, pancakes and french toast.  Today was one of those days...

Coconut latte made for me by Nate with two pieces of warm, gooey, cinnamony, sweet and a bit crispy french toast.  Organic maple syrup on top to make it healthy.

OMG so glad we have the Espresso machine up and running again.  If you want to change up your morning treat go for Almond milk or Coconut milk.  Gives the latte a whole new flava flave.


Frothy.  Believe it or not, it actually tasted better than it looks. MMMmmmmm!

Speaking of sweet stuff - my new favourite mix from Safeway.  Coconut, banana, papaya, pineapple, raisin, cranberry, cashew, almond, walnut, pecan and dark chocolate mix.  I added sunflower seeds too and didn't eat the chocolate as many of you know my issue with this devil food.  Long story short - I can't eat it or I won't be able to stop.

Wow - green.  Minestrone soup (it was ok, way too salty for me) and a side salad with spinach, kale, avocado, olive oil and balsamic dressing.


Delicious Gouda cheese with caraway seeds and whole grain crackers with sunflower seeds, cranberries and raisins.


I added this on top of a few as well.  Sweet, crunchy, spicy, creamy SOOOO TASTY!


Grande decaf full fat latte.  This has been my first one in a long long time - the rainy day just kinda called for it.

This will be my last one for a while.  Giving up dairy and replacing it with Almond Milk and/or Rice Dream.  That lactose just wreaks havoc on my tum tum, so much so that I need tums.

Yellow pepper with ground beef, rice, onion, basil and tomatoes.  Nate made them so I'm not too positive on all the ingredients.  


One of my favorite white wines.  


Finally back to my pre-pregnancy weight so I thought I deserved a little treat.

1/2 Cup of Oatmeal with cinnamon and raisins


Lunch
Whole grain toast with Almond butter, bananas and cinnamon.  Green peppers with olive hummus.


Snack #1
Fruit and fiber muffin and Oikos lime yogurt


Snack #2 
1/2 Avocado with coarse salt


OMG good.

Just a few before dinner.


Grilled chicken on red butter lettuce, romaine and cucumbers.  Low-calorie Creamy ceasar dressing.  


No, not proud of this, but holy of all holes - worth every calorie.  Full bowl of Lucky Charms with Rice Dream milk.  ahhhhhhh my mouth is watering just looking at this picture.

July 14th 

Anniversary Dinner at Candela
Usually I'm a very controlled and healthy eater, but on occasion, I love to just say screw it to calorie counting and portion sizes and just enjoy the delicious food.  The following seven pictures (haha...seven),  are what Nate and I consumed at dinner on our 6th year wedding anniversary.  Mom was at home with Scar while we were out.  This allowed us to sit, visit, and savour every single bite of our meal.  Tapas style is the best for sharing and boy did we have at 'er.


Calamari with coconut and lime.


Shrimp tacos


Riesling that Nate picked out.  I have no idea what the name was but sweet mother of goodness it was fantastic.  We ordered the half litre after having a glass each.


Crispy fried chicken drumsticks on sweet fennel and lettuce.


Moroccan Lamb stew with hummus.  This was the top dish in my opinion.


Pork skewers with sweet sauce and sesame seeds.

Obviously this isn't all that I ate today, but I just wanted to post that I totally indulge in treats every once in a while.  McDonalds Oreo Cookie McFlurry.

June 28th

Breakfast
1/2 cup of Oatmeal with 1/2 a Banana, a scoop of full fat Greek plain yogurt, cranberries, walnuts, sunflower seeds, chia seeds and cinnamon


Lunch
1/2 Avocado, cucumber mayo and dill on sourdough bread.  Side of seven grain salad from Safeway


Snack
Honey nut Cheerios with Rice Dream milk


Dinner
Tuna with spiral pasta, cucumbers, green onion, olives, yellow pepper, and salad.  Fig balsamic dressing.

Explanation:

Yes it's a Tuesday, and I don't normally like to drink on weeknights, but Nate and I took Scarlet to get her vaccinations today and it was beyond stressful for me.  I struggled with the decision for weeks before her appointment, and wasn't even sure if I would go through with it once we got there.  But when we spoke (for over an hour) with the nurse, she assured me that this was the best thing that I could do for my baby at this point.  I STILL felt like I was playing Russian Roulette, so I told Nate that we had to have a glass of wine when we got home to help de-stress.  I too had a shot because I learned that my last Tetanus booster was ten years ago, so I felt like I could somewhat relate with what she might be going through.  


Dinner

White rice with homemade butter chicken, onions and red peppers.  Side salad with yellow peppers and roasted-red tomato dressing.


Dessert

Loosing the last five pounds of my pregnancy weight hasn't been easy so I made the decision not to have 'true' desserts laying around the house.  I settled for a big bowl of Honey Nut Cheerios with Rice Dream 'Milk'.  Really tasty and hit my sweet tooth nicely.


June 12th '13


Oatmeal with Activia Blueberry yogurt and cinnamon

Cherry Larabar with dates and almonds.  YUM!




Tall Decaf non-fat latte with a brother in the back.  HI PAULZZZ!


Tacos with homemade guacamole, sour cream, lettuce, salsa, cheese, ground beef, peppers and onions.  TIMES TWO!!!  There were both so good.


Brother got himself involved.

We had sweet and salty popcorn for dessert and watched the movie 'Stone' on Netflix with Edward Norton and Robert De Niro.  It was ok.  It started off with a lot of promise and ended BAAADly.

What I ate today:

All bran cereal with water and a banana.



Whole wheat wrap with turkey breast, avocado (YUM), cucumber, red pepper, pickles, lettuce and mustard.

and a gala apple.  Milo wanted some too.  


Snack #1 Decaf, non-fat, vanilla latte GRAND-eh


Snack #2 Roasted Red Pepper hummus with carrots.


Special drink - Cranberry/Raspberry with San Pelligrino.  Couldn't find a garnish and I was thirsty so I just chugged it.

Pretty good eating day.  I'm trying to get rid of those last 5-7 pounds of baby weight but still want to maintain what little sanity I have - hence no strict dieting.  Also, since I'm nursing, I feel Scar needs the best and healthiest nutrition I can give her and I just think it wouldn't be smart to do that.  So yay... :)

Delicious juicy pear and a Harvest crunch granola bar

 This is what I ate today, the day before the big due date - not that she's guaranteed to show up tomorrow.  But, I really wanted to eat healthy and not worry too much about portions (actually I haven't worried at all about portions throughout the entire pregnancy).  As you can see, I enjoyed some smart junk food like the jam and baked chips.  I think this is a pretty good haul.  Hoping it gets me through the labour if it in deed happens tomorrow!
